Chinese-style baijiu is a high-alcohol spirit (generally 38°–65°) made from sorghum, wheat, corn, etc. through a distillation process. According to the aroma type, it is divided into four main categories: sauce-flavor type (Moutai, Langjiu), strong-flavor type (Wuliangye, Guojiao, Luzhou Laojiao, Yanghe), light-flavor type (Fenjiu, Erguotou), and Dong-flavor type (Dongjiu). The taste, brewing process, and aging characteristics of each flavor are different.

Moutai has the largest circulation, the highest recognition, and the most stable appreciation. It is the first choice for collection. Follow the series Wuliangye, Guojiao1573, and Yanghe Dream Blue series. Commemorative editions of local famous wines (Jiannanchun, Dongjiu, Xifeng) have unique collection value.
The "vintage" of Chinese-style baijiu generally refers to the aging period (such as 30 years of aging), not the grape/vinification year (different from Champagne/Armangnac). The longer the aging period, the higher the quality, and the higher the buyback value. Some brands (such as Guojiao1573) will indicate the year, and some (such as the old Moutai) will indirectly reflect the year with the batch number.
Depends on the brand with the same decline. baijiu has a high alcohol content (generally above 52°), and slight drop of liquid (within half a centimeter) is normal aging, with a value deduction of 8–12%. A drop of liquid of more than 1 cm reflects the deterioration of the sealing performance of the bottle stopper, with a deduction of 20–30%.
