Dom Pérignon was founded by the Benedictine monk Pierre Pérignon (commonly known as Dom Pérignon) in the late 17th century (around 1668). He is revered as the "Father of Champagne" and is credited with improving the traditional method of secondary fermentation in the bottle. In 1936, Moët & Chandon launched its flagship vintage champagne series under this name, with the first Vintage 1921 released in 1937.
Dom Pérignon is a Vintage Only brand (only produces vintage wines, no NV versions), and is only produced in years deemed excellent by the Cellar Master. For example, only about 40 vintages have been produced in the past 50 years. Each bottle of Vintage is aged for at least 7 years before release (standard P1 version).
