Juyondai is produced by Takagi Shuzo in Yamagata, founded in 1615, and is now led jointly by 15th-generation brewer Tatsugoro Takagi and 16th-generation successor Akitsuna Takagi. The name "Juyondai" comes from the 14th-generation brewer's innovative philosophy. First launched in 1994, it challenged the sake industry's focus on polishing ratios in favour of pursuing excellence with sensible rice polishing. Supply in Japan is scarce and export allocations are even smaller, making it one of the Japanese sakes most sought after in Chinese-speaking markets.
