Brandy is a distilled spirit made from fermented grapes or other fruits. Among them, Cognac, produced in the town of Cognac, France, is the most famous and represents the pinnacle of brandy. Other important brandy-producing regions include Armagnac in France, Brandy de Jerez in Spain, and American Brandy.

Cognac must meet the strict regulations of the BNIC (Bureau National Interprofessionnel du Cognac): use of Ugni Blanc grapes, double distillation, aging in French oak barrels, and production within the Cognac appellation. Armagnac uses single distillation and has a more robust, wild character. Brandy de Jerez uses the Solera system for aging, resulting in a dark fruit flavor from the sherry casks.
