Kweichow Moutai is produced by the Kweichow Kweichow Moutai distillery in Moutai Town, Renhuai City, Guizhou Province. It uses red tassel sorghum and local wheat as raw materials and adopts the "12987" traditional process (1-year production cycle, 2 feedings, 9 cookings, 8 fermentations, and 7 wine extractions). It must be aged for at least 5 years before bottling. Moutai is a representative of the sauce-aroma baijiu, and is also the designated wine for the state banquet of the People's Republic of China. In 1915, he won the gold medal at the Panama International Exposition and established his international reputation.
